The Story

Steamed oysters arrive in a translucent mushroom broth perfumed with garlic and ginger. Maitake and shiitake give the liquid a meaty umami foundation while a golden chickpea crisp and tender broccoli confit add texture and bright pepper notes.

This dish balances marine nourishment with medicinal mushrooms and allium aromatics. Steaming preserves oyster vitality while a concentrated mushroom stock amplifies immune supportive compounds.
