Slow Cacao Root Stew

Earthy depth to steady the mind

25 prep240 cookServes 4360 kcal per serving

The Story

A meditative bowl built for calm. Ceremonial cacao enriches a slow simmer of root vegetables and warming spices to create a savory sweet stew that grounds a distracted mind. Each long cook releases layered aromas that settle the nervous system.

Clarity emerges from depth. Slow transformation allows bitter edges to mellow and subtle compounds to bloom. We use cacao as an ally not a stimulant to open presence.

Ingredients

  • Root Vegetables800 g mixed peeled and chopped
  • Vegetable Broth600 ml
  • Ceremonial Cacao30 g grated
  • Cinnamon1 teaspoon ground
  • Cardamom1 teaspoon ground
  • Chamomile1 tablespoon dried
  • Lemon Balm15 g fresh
  • Honey2 tablespoons

Method

  1. 1Infuse the vegetable broth with chamomile and lemon balm by bringing to a low simmer for 10 minutes then strain
  2. 2Place the chopped root vegetables in a heavy pot or slow cooker and cover with the herbal broth
  3. 3Add cinnamon and cardamom then set the cooker to low and allow the stew to slowly cook for three to four hours until the vegetables are fully tender and flavors have married
  4. 4Stir in grated ceremonial cacao and honey until the cacao is completely integrated creating a silky dark broth
  5. 5Adjust consistency by gently mashing some root pieces to thicken and finish with a scattering of fresh lemon balm before serving
  6. 6Serve warm in deep bowls and encourage five mindful breaths before tasting
