The Story

Deep flavored mackerel seared until the skin sings is lifted by a raw walnut and pumpkin seed pesto kissed with turmeric and black pepper. The result is grounding and clarifying.

Moderate heat protects delicate omega 3 oils while a cold prepared pesto preserves antioxidants. Turmeric combined with pepper and a creamy fat provides sustained clarity support.

Ingredients

  • Mackerel Fillets2 total 300 g
  • Walnuts50 g
  • Pumpkin Seeds30 g
  • Avocado1 small
  • Turmeric1 tsp
  • Black Pepper1 pinch
  • Leafy Greens80 g
  • Flax Seeds1 tbsp
  • Dark Chocolateoptional 5 g grated

Method

  1. 1Toast the pumpkin seeds and walnuts briefly on moderate heat until fragrant then allow to cool for the pesto base.
  2. 2In a blender combine the cooled seeds and nuts with mashed avocado turmeric and a pinch of black pepper and pulse until a coarse cohesive pesto forms using the avocado as the fat carrier.
  3. 3Pat the mackerel dry then sear on moderate heat skin side down until crisp then turn and finish for two minutes depending on thickness.
  4. 4Dress the warm leafy greens with a spoonful of the walnut turmeric pesto and spread a layer on each plate.
  5. 5Rest the seared mackerel on the dressed greens and finish with a small grating of dark chocolate for an unexpected mineral echo.
