The Story
This relish is a study in contrasts. Lively lactic fermentation lifts the natural sweetness of pomegranate while shiitake mushrooms deepen the savor. Toasted walnuts and dark chocolate nibs add texture and gentle bitters to finish.
Fermentation creates beneficial microbes while improving nutrient availability. Adding bitter dark chocolate and omega rich walnuts balances palate and supports antioxidant networks at a cellular level.
Ingredients
- Shiitake Mushrooms Stems Removed Thinly Sliced1 cup
- Pomegranate Arils1 cup
- Sea Salt1 tablespoon diluted in one cup water as a brine
- Walnuts Toasted Chopped Half Cup
- Dark Chocolate Chopped One Quarter Cup At Least Seventy Percent Cocoa
- Extra Virgin Olive Oil1 tablespoon
- Maple Syrup One Teaspoon Optional
- Fresh Lemon Zest One Teaspoon
Method
- 1Place sliced shiitake and pomegranate arils in a sterilized glass jar. Press gently to compact but do not puree.
- 2Pour the brine over the mixture ensuring solids are submerged. Leave about one inch head space and seal loosely to allow gases to escape.
- 3Allow to ferment at room temperature for three to five days tasting daily. When it develops a balanced tang move the jar to cool storage.
- 4Before serving fold in toasted walnuts, shaved dark chocolate and a drizzle of extra virgin olive oil. Finish with lemon zest and a touch of maple if you want a rounded sweetness.
