The Story

This roast was composed for evenings when you want fullness without weight. The crucifers transform under high heat into caramelized crowns. A green lemon pesto cuts through the richness while a walnut seaweed furikake adds a salty crunch reminiscent of coastal winds.

Dense plant meals are about layers. Tender legumes anchor roasted vegetables. Herb sauces brighten. Toasted nuts and seaweed add mineral density to satisfy both palate and physiology.
