The Story
A sculptural plate that honors crucifers. Thick cauliflower steaks are charred until smoky and paired with roasted Brussels sprouts and a green walnut kelp pesto. A velvety white bean cream unites the elements into a deeply satisfying plant forward main.
Build intensity through heat and layers. Char to create smoky aromatics then temper with herb driven sauces. Use legumes and nuts to provide richness without dairy and to deliver lasting nourishment.
