The Story

This relish is an ode to layered fermentation. Tart apples meet bold kimchi and supple sauerkraut for a condiment that lifts simple plates into ritual. A miso and roasted garlic dressing binds the textures while flaxseed adds body and a nutty whisper.

Condiments are micro ecosystems. Combine fast lacto fermentation for brightness with existing cultivars like kimchi and sauerkraut to increase complexity. Let time and salt do the work for a vibrant finishing sauce.
